green apple cookies with fresh grated apples + vegan & gluten free recipes

as a mom with 2 kids who absolutely adore fruit and cookies, i’m always on the lockout for new for new ways to bring these two loves together.

recently, i stumbled upon the best apple cookie recipe and let me tell you- it’s a total game changer, these cookies are easy and delicious, but of course like any recipe getting the perfect flavor and texture isn’t just about tossing ingredients  into a bowl it’s a bit of a journey – a fun learning process.

the secret to making them super soft and  ” melt in your mouth ” texture on the inside and extra crispy on the edges, is all about  finding the right balance between mixing kneading and hitting that exact baking tem and cooing time .

the ultimate apple cookie can take on so many delicious variation , the best filling and topping that pairs perfectly with these cookies to make them truly unique.

ingredient :

for me , the key is in the measurements you can’t just eyeball things when it comes to baking , especially when you want those green apple cookies to turn out soft chewy and moist without losing that crispy crunchy bite.

1 cup of butter :  i like to use softened butter not melted , the butter is what gives these cookies that fluffy texture .

3/4 cup of brown sugar and 1/4 cup of granulated sugar : the mix of both sugars is what gives these cookies their fudgy chewy center , the brown sugar adds moisture while the granulated sugar helps them get that nice crispy edge.

2 cups of flours : you need the right balance of flour to give structure, too much flour and the cookies turn out dry too little and they’ll spread too much .

it’s all about finding that sweet spot for that soft yet slightly crunchy texture.

1/2 teaspoon of baking soda : this is crucial for that little lift, making the cookies super fluffy without losing their chewiness , i learned that too much baking soda can make the cookies spread too thin which we don’t want!

1 egg and 1 yolk : the egg adds moisture and richness, while the extra yolk make them more moist and gives that chewy texture that i love.

1 teaspoon of vanilla extract : it’s subtle but essential , vanilla brings out the fresh flavor of the apple without overpowering them.

1 cup of apple puree

1 cup of diced the start of the show! chop them into small cubes so they bake evenly into the cookies , green apples add that perfect hint of tartness and keep the cookies felling fresh and fruity.

optional ingredients :

for apple concentrate since it’s more potent and thicker ,1 – 2 tablespoon should give you that rich deep apple flavor , again start with less and adjust based on how bold you want the apple  taste to be.

mixing and baking :

when it comes to mixing the ingredients , i start by creaming the butter and sugars together until it’s light and fluffy about 2 minutes this step is key for that flavored richness .

then i add the eggs one at a time making sure everything is well combined then i add the apple puree

after that, i slowly mix in the flour and baking soda until just incorporated , you don’t want to overmix or else the cookies will turn out dense instead of soft and chewy.

as for kneading well, i’ve found that for cookies it’s more like gently folding in the apples at the end, i want those pieces to stay fresh and crunchy without mushing them , so i’m careful not to overwork the dough.

how long to bake : when i first started baking apple cookies, figuring out the perfect baking time and temperature was a bit of trial  and error .

if you bake them at 350 for 12 to 14 minutes you get that perfect balance of soft chewy center with slightly crispy edges .

but if you want them extra crunchy baking them at 375 for about 10 to 12 minutes works wonders – just keep an eye on them because they brown faster.

filling and frosting :

when i first started making apple cookies , i knew they needed the perfect filling to really bring out that fall flavor, after experimenting i found some incredible filling and frosting.

one of my favorite is using apple pie filling – it adds that rich , spiced flavor that makes the cookies taste like cozy autumn day.

sometimes , i make a simple applesauce filling which is lighter and perfect when i’m looking for something a bit more fluffy and for a fun twist , i’ll mix in apple jam to give it a smoother texture without losing any of that bold real apple taste.

when i started experimenting with fruity filing for my apple cookies , i was amazed at how much they could elevate the flavors!

sometimes i play around with maple syrup or even a hint of vanilla depending on the mood .

i even experimented with royal icing and while it’s not as rich  it sets beautifully and adds that delicate glossy touch.

healthy version :

i’ve always loved baking , but as i got more into healthier diet, i started wondering if i could still make apple cookies that were just delish , but way better for me and my family.

i mean i had always used butter and regular sugar in my cookies , but what if i could make them gluten free – flourless or even dairy free without sacrificing that yummy flavor.

so , after lots of experimenting, i found my ultimate healthy version of apple cookies .

i’m talking oatmeal – based cookies made with old fashioned rolled oats and almond flour – which mean they’re gluten free and perfect for anyone looking for low carb treat .

no butter ? i use buttermilk  or olive oil which not only made the cookies taste fresh and rich but also  kept them moist and soft without being heavy.

and since i wanted to cut down on sugar , i sweetened them with a mi of honey and a ittle brown sugar , the result ? sugar free low calorie cookie that still feels like a sweet indulgence.

for a little extra fun , i added dark chocolate chips freeze dried apple or  raisin walnut  paired well with the tartness of the fresh  apples.

i even found a way to make these cookies eggless! it turns out apple just  or even a little applesauce works wonder as binder , making them perfect for a vegan or dairy free option.
